Moving around icons in the Dock is a breeze, because you can just drag them around and in and out of the Dock if necessary. The same can be done with the Menu Bar. You can remove and rearrange icons in the Menu Bar by holding down the Command key and clicking the icon you wish to remove or rearrange. Then, if you want to remove it, simply drag the icon off the Menu Bar. If you want to put it somewhere else on the Menu Bar, drag it around until its in your desired location, just like in the Dock.

(Note: I have Leopard 10.5.1, I have not tried this with any other build of Leopard or past OS’s)

In Tiger when I wanted to make icons of a folder I used a little script called ‘Icon Creator’. It didnt work anymore in Leopard. While experimenting I discovered a very fun and easy way to make icons in Leopard.

All you have to do is to open a jpeg (I believe any format that will open works) in PREVIEW.

Then (with the selection tool) you select the part of the picture you want as your icon. Now COPY it (press Comand + C)

Select a folder (or anything you want to change the icon of) and Right-click on this folder, bringing up the info pane. Go up to the top of the pane, click once on the icon to highlight it, and PASTE.

You now have your new icon.

Check out this cool app that lets you hack your dock and icons with ease (and a whole lot more!).

It’s called “CandyBar”. It has a really nice interface and seems to be a whiz at not only changing your icons but organizing them as well!
